Midsummer Collins

Ingredients:

2 oz Mount Kebne Aquavit

2 oz rhubarb simple syrup*

½ oz lemon juice

club soda to top


*Rhubarb simple syrup: 1 cup water, 1/2 cup sugar, 2 tbs lemon juice, 1 lb chopped rhubarb. Bring all to a boil, then turn to low. Simmer 1 hour. Strain through a cheese cloth once cooled.


Directions:

  1. Add all ingredients to tall collins glass with ice.

  2. Top with club soda and stir well.

  3. Garnish with lemon wedge.
