CRUST:
1 C flour
½ C butter (softened)
¼ C powdered sugar
Preheat over to 350. Pour yourself some chilled Limoncello di Leelanau to sip as you bake. Spray 8x8 baking pan with Pam and then lightly flour over it. Sift flour and sugar into a bowl. Blend in butter with a fork until mixture is crumbly. Pat mixture evenly into prepared pan. Bake 20 min.
TOP LAYER:
2 eggs
1 C granulated sugar
½ tsp baking powder
1 ½ Tbs fresh lemon juice
1 ½ Tbs Limoncello di Leelanau
Zest of one lemon
Dash of salt
While crust is baking, pour yourself some more chilled Limoncello di Leelanau to sip while you work on the top layer. Beat eggs in medium bowl. Add other ingredients. Mix well. Pour onto slightly cooled baked crust. Bake 22-25 minutes, until set. Cool, sprinkle with powdered sugar.
Serve with chilled Limoncello di Leelanau."
