Jamaican Double Rum Wings

Ingredients:

1/2 Cup Manitou Passage Rum

1/4 Cup Whaleback Spiced Rum

3 Tbs. Fresh Lime Juice

3 Tbs. Soy Sauce

3 Tbs. Dark Brown Sugar

4 Cloves Fresh Garlic

3 Green Onions

1 or 2 Habanero Peppers (seeds and membranes removed, and please were plastic or latex gloves when handling these peppers)

2 Tbs. Fresh Ginger (grated)

1 1/2 tsp. Ground Allspice

Kosher Salt and Pepper

12 Chicken Wings (split at joints, tips removed)


Directions:

1. In a Blender, combine, both Spiced and White Rum, Lime Juice, Soy Sauce, Brown Sugar, Garlic, Green Onions, Habanero, Fresh Ginger, Allspice, and 2 tsp. Salt, and 1/2 tsp. Pepper. Blend until all ingredients are finely chopped.

2. Place Wings in a resealable bag, and pour over the marinade. Press the air out and seal the bag tightly. Place in refrigerator and allow to marinade over night. Flip bag over to allow for even marination.

3. Drain the wings, prepare the grill (or grill pan if the snow is too deep), and cook between 30 minutes and 45, or until juices run clear.

4. Serve with fresh lime wedges. Enjoy.

Warning: SERIOUSLY! Wear gloves when you handle the Habanero peppers
