1-1/2 oz Jack Pine Gin
3/4 oz lemon juice
3/4 oz simple syrup
2-3 oz sparkling wine (We used Good Harbor Blanc de Blanc.)
1. Shake all except the sparkling wine on ice until chilled.
2. Strain into Champagne flute.
3. Top with sparkling wine.
4. Garnish with twist of lemon.
