Bourbon Glazed Salmon with Bourbon Pecan Topped Sweet Potatoes

Bourbon Glazed Salmon Recipe (Serves 2-4):

3 Tbs brown sugar

3 Tbs Latitudes or Deer Camp Straight Bourbon Whiskey

2 Tbs soy sauce (low sodium is fine)

1 Tbs grated peeled fresh ginger

1 Tbs fresh lime juice

3 cloves garlic, minced

1/4 tsp fresh ground pepper

2 - 4 skinless salmon fillets

1/4 C thinly sliced green onions

1 Tbs sesame seeds, toasted

Combine the first 7 ingredients in large zip-loc bag. Add fish and seal the bag. Let marinate in refrigerator 1.5-3 hours, turning occasionally.

Heat a large nonstick skillet over med-high heat. Coat with cooking spray. Add fish with the marinade to pan. Cook until desired doneness, approx 4 minutes per side. Plate fish, drizzle each with cooked marinade sauce. Sprinkle with green onions and toasted sesame seeds.


Quick Candied Bourbon Pecans Recipe:

Heat desired number of pecans in dry pan for a 5-8 minutes, stirring frequently. Add a bit of butter, brown sugar, and NLD bourbon (add carefully!). Stir constantly until bourbon candy coating thickens, just a few minutes. Serve over mashed sweet potatoes.


Serve with Latitudes or Deer Camp Straight Bourbon Whiskey neat or in your favorite NLD bourbon cocktail.
